Fun With Food = GF Gingerbread...

Bex Davies Gluten-Free Gingerbread!


Here is a copy of the original recipe...

INGREDIENTS

125g butter
2/3 cup golden syrup
1/2 cup brown sugar
2 3/4 cup gluten free flour*
[you could use standard all purpose flour if no issues with gluten/wheat]
3 teaspoon ground ginger
2 teaspoon grated fresh ginger
1-2 teaspoon vanilla
1 teaspoon baking soda

METHOD
1. Cream butter/sugar in food processor add golden syrup, then add rest of ingredients until it forms a ball.
2. Roll out and bake at 190 degrees for 8-10 minutes.

Here are my variations:

125g butter

1/2c brown sugar
2 3/4 c gluten free flour
1.5 tsp xanthum gum
5 tsp ground ginger
2 tsp vanilla ess
1 tsp baking soda

1) Cream butter and sugar, add golden syrup
2) Add the rest of the ingredients until it forms a ball
3) Roll into small balls and flatten out into biscuits with your fingers!
4) Bake at 190oC for 8-10 minutes

And here are pictures of my first ever batch (have made plenty more since, a firm favourite in our house, even Button asks for 'Mummy's hot biscuits please'!), but have not taken any further photos... I have learnt to cook slightly longer if you want crunchy biscuits, rather than soft and chewy! I am a soft and chewy girl, but hubby loves crunchy - so I try to make sure I cater to us all when I have a baking day!



Hope you enjoy these, can be made gluten-free or not as the recipe says... only ever used g-f flour though, so have no idea what it is like with normal flour!

Super simple, super easy and super tasty... if I can make them, anyone can!
