Another Promised Recipe!

WOW - two posts in two days, and both recipes to boot!
However, no photos for this one :-(! 
I was going to include two birthday cakes I have made following this recipe in the past few months (it is my go-to no-fail always-comes-out cake)! But then realised that after my computer died, I still haven't had all my photos put back (they are safe and sound thankfully); have only got photos since October on here - and none of these include the chocolate cake! Hopefully, one day, when I get everything sorted - I may remember to edit this post and include some of the pics of the cake... maybe!

One Bowl Gluten-Free (and dairy-free) Chocolate Cake
1.5 c gluten-free flour 1/2 c cocoa 1 c sugar 1/2 tsp salt 2 tsp baking soda 1.5 tsp gum (I use xanthan) 5 tbsp cooking oil (I use olive) 1 tbsp vinegar (I use balsamic) 1 tsp vanilla ess 1 egg 1 c water

Potato Burgers:

Ingredients: 8 Potatoes (I used 6 potatoes and 2 kumera for added flavour) 1/4c plain flour (I used gluten-free of course) 1/2tsp baking powder 3 eggs A pinch salt and pepper (to taste)
250g beef mince 1/2 onion 2 tsp minced garlic 1 egg 1/4 plain flour (or breadcrumbs - as above, gluten-free for me)
Oil as needed
1) Peel and grate all 8 potatoes (I cheated and put them through my food processor, making this part of the prep much quicker). Then peel and chop finely, (or grate), the half onion. 2) Mix together the grated potato, flour, baking powder, 3 eggs, and salt and pepper in one bowl. 3) In a second bowl mix the beef mince, onion, garlic, 1 egg, and flour/bread crumbs until well combined. 4) Heat some oil in the frying pan over medium heat (I used my electric frying pan), and drop a tablespoon of potato mixture into the hot frying pan. From Famine to Feast...

I am still here, promise!!! 
Since we have come home from holiday, life has been BUSY & it doesn't appear to be slowing down anytime soon! I am loving it, but with 'lil M still up every single night, I am exhausted!!! 
I finally had a free evening last night, & was going to blog - but wouldn't you know it, the internet crashed... I was not impressed. There went all my good intentions up in smoke (& my good mood, grrrr)!!!!
Anyway, just popping in briefly while the small child actually sleeps (he was up at 8pm, 10pm, 1am & 3am... then up for the day at 6am. At 2am Button fell out of bed; it was a LONG night) & the big one is colouring in, & constantly talking whilst she does! 
I have a list of about 11 different idea's for posts... so one day soon it'll turn from a famine here, into a feast - but it'll have to wait until I get another quiet evening, combined with internet!!!
I need to sign off now, I am SO tired I doubt I am making much sense;…

Blogging Mojo BACK!

I hope anyway!
Currently I have like 50-thousand (okay, so slight exaggeration there) posts floating through my head; think I'd better write some of these down so I don't forget them! I know my sis-in-law starts writing them in Word first, so she doesn't forget them; and as she completes each article, she posts it (at least she used to)! I tried this once, wrote out the first line of a few different posts - but ended up deleting them all, as I couldn't remember, even slightly, what the posts were meant to be about! Really didn't work for me... I think I need a small notebook, and dedicate a page per article idea, and jot down notes to include as I think / remember things.
But I am digressing, again!
I have finally downloaded all my photos from this Christmas / Holiday, and have sorted them into appropriate months / days (well, my new photo editing programme has anyway)! So I thought I'd start off fairly simply, and just share these with you... but talking of progr…
