Sunday Snippets 8

It has been a week of highs and lows here... I guess that is a typical week for the majority of people; but it felt rather extreme for me! The lack of day-sleeps has finally started to really get on top of Button, but she is still stubbornly refusing to sleep... so Monday saw an almost non-stop 4-5 hour tantrum, from between 2-3pm right through until bed at 7pm. By the time hubby got home at 5pm I was well over it all. We knew it was just tiredness-induced, but that doesn't change how frustrating it all is! She, for only the second time in her life, screamed all the way round a shop (much to my mortification)!  And that has pretty much summed up her week - she has really struggled with it all this week, and we have had tantrum after tantrum. I finally convinced her to sleep on Friday, and again this afternoon - but that is all (actually I got 45 minutes in the car on Monday after the shopping) ! But in saying that - Friday worked out well, as she was asleep by 8pm that night

Sorry folks; turning out to be an ultra-busy weekend, out tonight and out tomorrow. It will get done, hopefully tomorrow sometime - but it will be later than usual!

Fun With Food = GF Gingerbread...

Bex Davies Gluten-Free Gingerbread! Courtesy of  NZ's Hottest Home Baker Here is a copy of the original recipe... INGREDIENTS 125g butter 2/3 cup golden syrup 1/2 cup brown sugar 2 3/4 cup gluten free flour* [you could use standard all purpose flour if no issues with gluten/wheat] 3 teaspoon ground ginger 2 teaspoon grated fresh ginger 1-2 teaspoon vanilla 1 teaspoon baking soda METHOD 1. Cream butter/sugar in food processor add golden syrup, then add rest of ingredients until it forms a ball. 2. Roll out and bake at 190 degrees for 8-10 minutes. Here are my variations: 125g butter 2/3c golden syrup 1/2c brown sugar 2 3/4 c gluten free flour 1.5 tsp xanthum gum 5 tsp ground ginger 2 tsp vanilla ess 1 tsp baking soda 1) Cream butter and sugar, add golden syrup 2) Add the rest of the ingredients until it forms a ball 3) Roll into small balls and flatten out into biscuits with your fingers! 4) Bake at 190oC for 8-10 m

Sunday Snippets 7

Thanks for popping into Sunday Snippets again! Hopefully we'll inspire a few more of you to join in soon :-)! This week was very quiet - after two weeks out of routine due to public holidays and guests, I decided the kids needed a quiet week to get used to 'normal routine' again (we'd only had one week pre all the disruptions)... I also needed to focus on Button's toilet training , and make the most of the fact she was finally starting to 'get it'! So we, literally, only left the house twice during the week; and those were short trips for things like fruit etc. So - this is what our week consisted of: Homemade Muesli Gluten-free at that!  Got a bit of refining to do though, not as yummy as ours! Some great successes in the kitchen Recipe can be found  here And there were some not-so-great meals, SO bad they got chucked out...  yep, still on a steep learning curve here! Little friends who were briefly watching

Proud Mama Moment!

Linking in over at  Washing Line Revelations One major break-through this week, and one VERY proud Mama! Button seems to have finally caught onto toilet training! Wahoo - after months of just nothing from her (admittedly, we weren't the most consistent either, as day after day of accidents tend to leave you rather despondent), it seemed to click overnight! My parents were up, and Mum was playing with her when she suddenly told her she needed to go to the toilet - up until then she has always told us during or after the fact! Mum grabbed her, told her to hold on and ran to the toilet; and that was the end of that! She even managed a 'no accident day' one day this week - earning herself 6 marshmallows! SIX - that would have been six changes of clothes just last week; praise God, I am SO thrilled! Of course I don't have an appropriate photo to share, but  will give you a happy photo of my Button... one proud Mama!
